Low Phenols and Salicylates

People with sensitive digestive/immune systems may have trouble eating foods high in phenols and salicylates.  Phenol is a natural chemical found in fruits, nuts and veggies (tomatoes, apples, peanuts, red grapes).  Many autistic children have low levels of the enzyme needed to metabolize phenol.  The build up of this compound can stimulate the central nervous system resulting in hyperactivity, aggression, inappropriate laughter, digestive issues, red face/ears, sleep disturbances, headaches and fatigue.
